Venison gyoza, egg yolk, pickled shiitake, Asian slaw, consommé.
Treacle cured chalk stream trout, Hampshire wasabi, kohlrabi, buttermilk, ponzu.
Halibut, mussels, Jerusalem artichoke, squid ink, sea vegetables.
Squab pigeon, crispy leg, offal, heritage carrots, red cabbage, seed crumble.
Pigs blood bavarois, macaroon, meringue, blood orange.
Beetroot parfait, sorrel, meringue, white chocolate, goats curd.
